Salmon & Endive Salad

(for phase l and phase 3) [Serves 2]

INGREDIENTS
l can of sustainably caught salmon, drained
1/2 stalk celery, diced
1/2 green apple, diced l teaspoon capers
l tablespoon hemp seeds
2 tablespoons parsley, chopped
l tablespoon extra virgin olive oil salt and pepper to taste
4 -6 Endive leaves

Mix all the ingredients, except endive together. Serve in endive leaves.
